Lessons in Frying: Taco Salad

This week we fried up tortillas for Taco Salads. We used uncooked tortillas and shaped them into bowls. In our first attempt the tortilla went flat. In the second attempt the tortilla held the shape much better but still wasn't up to par. Our third attempt was the charm. I pulled our metal doughnut cutter out of the drawer and wrapped the tortilla around it in the shape of the bowl. Then I lowered the tortilla (still wrapped around the dough cutter) into the fryer...here is the result.

Seth created the mixture of greens. He mixed spinach, green onions, onion, mushroom, avocado, cilantro, basil, green peppers, and hot peppers. We also had a mixture of chicken, black beans, and re-fried beans that we used as the base for our salad. A little dallop of sour cream and some salsa and our creation was complete.

Cooking with Apples

We have been trying to use up all of the apples that we have cooked. I made an apple pie last Sunday using the Barefoot Contessa's recipe. I didn't have a few ingredients but it still turned out well.

While making the apple pie I cut up too many apples...really I cut the number they suggested but they were quite big, so I made apple oatmeal crisp also.

This morning Seth got his first taste of apple pancakes. My mom used to make these occasionally on Sundays after church. It is definitely my favorite breakfast recipe. You mix up the pancakes like normal and add a grated apple and 1/2 teaspoon of cinnamon to the batter. My favorite part is the apple syrup. In a medium sized pot combine 1 cup sugar, 2 Tablespoons cornstarch, 1/2 tsp pumpkin pie spice, and 2 cups of Apple juice. Stir and cook until thickened. Add 2 Tablespoons of lemon juice and 1/4 cup butter. Serve warm over the apple pancakes. Yum.

I also made apple oatmeal cookies. They didn't turn out as well as I would have liked. I used butter flavored Crisco and should have used real butter.

On that note our apples are nearly gone. Can't wait until next year.

July 20th = Wedding Day

Seth and I were married 3 months ago. I remember waking up the day of our wedding and thinking "Today I get to marry Seth." I have never been more excited for a day in my entire life. We had started a count down chain soon after we became engaged, the same type of chain a child makes before Christmas. It felt like the chain was never-ending. But the day finally came. By far my favorite part of the day was the temple. I loved sitting in the celestial room with Seth prior to our sealing. I loved walking into the sealing room and seeing all of our loved ones. Most of all I loved walking out of the sealing room with Seth as my husband.
